21 Day Fix Part 1

I’m halfway into Round 1 of 21 Day Fix! Today marks Day 12 and I’m out with an injury so unfortunately I missed out on today’s workout. The good news is that missing this workout really bums me out. Why is this good news? Well because that means I’m actually looking forward to working out! The past couple of years I have dreaded working out, I had the time I had the resources but I just didn’t want to do it, and I felt like crap. The longer I went without working out the more miserable I became. So the fact that I’m bummed I couldn’t do today’s Dirty 30 workout (which is killer) is a great sign! So let me recap some of my Read More

Sweet Potato Medley

Not to be overly dramatic but, this sweet potato medley was everything! We are always looking for ways to incorporate sweet potatoes into our meals but oven roasted and fries just wasn’t cutting it anymore. I decided to try something new and it definitely worked! This recipe is simple and inexpensive…I hope you try it and I hope you love it!   Carrot, Sweet Potato and Kale ala Jessica (feeds 4) 2 medium sized sweet potatoes (peeled and cubed about 1/2 inch) 2 medium sized carrots (peeled and sliced about 1/4 inch) 2 cups of chopped kale 2 cloves of garlic, minced 1/4 cup onion, diced Olive oil, Coconut oil or butter (I used butter) Heat the cooking oil of your choice in a large sauté Read More

Power Breakfast

I found my new go to power breakfast! All you need is some bread, avocado, egg, a little seasoning and about 5 minutes!   Don’t just use any bread, look for bread that is also providing you with some good energy like Dave’s Killer Good Seed Bread; my absolute favorite and bonus, can be purchased at Costco!   Next, don’t get fancy with the avocado spread just open up an avocado and mash it up on your toasted bread using a fork – no salt you’ll get flavor from your yummy egg.   Follow that up with a healthy egg, I choose brown omega-3 rich eggs. Cook that bad boy over easy and sprinkle it with some sea salt, black pepper and red chili pepper Read More

Baby Food Makin’ Carrots Edition

Carrots weren’t planned. I had to buy carrots for a recipe and had a few left over and I thought “why not?”, it’s not that carrots aren’t healthy but they just weren’t “fun”. I wanted to do pears, sweet potatoes…but it happened, I made carrots and my little man loves them. So far I think his preference is 1. Zucchini 2. Carrots 3. Applesauce. I’ve kept applesauce as his 1st solid food feeding of the day so maybe he’s just tired of them and is excited to try something new, I’m not sure but man oh man do I get some smiles when he’s eating zucchini and now that we’ve thrown carrots in it’s almost as if he’s yelling at me during his feeding because Read More

Let’s Talk Chili

It’s the perfect time for chili! Monday night I made some yummy chili straight out of the Fixate cookbook; not only was it the perfect night for it but it was simple, delicious and we have tons leftover.   I love turkey chili! My go to recipe goes something like this: 2 cans tomato soup, 2 cans diced tomatoes, 2 cans of chili beans, 1 packet of chili seasoning, ground turkey and then top it with a little shredded cheddar and fresh onions. This recipe is so easy to remember I’ve never had to write it down and it was given to me by a very nice lady I met from Georgia, sometime in ’06 or ’07. It’s still a favorite, I love making it every year! Read More

Halloween Hangover

Not the type of hangover I’m used to but it took me a couple days to recoup after Halloween week! I remember when I was trick or treating age, we got ready the night of Halloween and my Mom drove us around trick or treating. Easy. These days there’s Trunk or Treats just about everywhere, we have to take the kids to see Grandma and Grandpa, multiple Halloween events throughout the week and after all of that you still have to go trick or treating Halloween night. Exhausting.   We started the week off at Still Water Hollow for their annual Harvest Party and wow, so much fun! But one thing I couldn’t figure out…why weren’t there more people there? This event is FREE with any donations going to the Rescue Read More

I’ve been so busy making yummy food and doing Mom stuff  that I haven’t posted any updates on Fixate!   So far everything has been awesome! I love love love that these recipes are enough for several meals because we had leftovers every time!   Here are some of the delicious meals I’ve made over the past couple of weeks: Vegetable Egg Cups What a time saver! I mixed all the ingredients in (eggs, mushrooms, bell peppers) poured the mixture in some muffin pans and threw it in the oven. I had these for mornings to follow and all I had to do was reheat in the oven for a bit. Mexican Chicken Tortilla Soup Definitely one of my favorites!! The last time I made Chicken Read More

Baby Food Makin’ Zucchini

Zucchini was the second food I wanted to introduce to Joaquin, not only because it’s a healthy veggie for baby but my parents always grow so much in their garden and we always have too much sitting around going to waste.     The first batch of zucchini I made was not the best! Two things I did wrong: 1. I peeled the zucchini – don’t do that, you lose so many nutrients and once it’s steamed it purees so well that you don’t have to worry about baby eating any peel 2. I added water. If you are following a recipe and it calls for adding water I strongly suggest you try blending the zucchini on it’s own and adding water later if you want Read More

Day Numero Uno

Let me start off by saying…YUM! Everything I made today was a hit and hubby approved! Breakfast – Portobello Mushroom and Goat Cheese Omelette I replaced the goat cheese with Feta – filling and tasty. My omelette kinda fell apart when I folded it over, I made the mistake of using a larger pan which thinned it out too much but the result was the same…delish!   Lunch – Creamy Chicken Salad Wrap   Alex loved this, the flavors are not something we are used to, we rarely use dijon mustard or mix grapes into a salad, but everything came together perfectly!   Dinner – Turkey Sloppy Joes with Sweet Potato Chips   O M G. New favorite. This will be a regular in our Read More

It’s Here! 21 Day Fixate

The cookbook arrived and I couldn’t wait too pick out some meals and go grocery shopping! I’m keeping it simple for week 1 and choosing 3 recipes per meal as well as 1 soup, a couple snacks and a couple shakes. I’m also choosing recipes where food can be reused for other meals and recipes that don’t require a big investment on my part when it comes to grocery shopping. Here’s my Week 1 Menu: Breakfast:  Vegetable Egg Cups Banana Oat Pancakes Portobello Mushroom and Goat Cheese Omelette Shakes (I do not currently have Shakeology so I’m using good ol protein powder): Banana Peanut Butter Bliss Berry Delight Lunch: Creamy Chicken Salad Wrap Creamy Chicken Salad Mexican Taco Lettuce Wraps Snacks: Sweet Potato Chips Zucchini Chips Read More
