Not to be overly dramatic but, this sweet potato medley was everything! We are always looking for ways to incorporate sweet potatoes into our meals but oven roasted and fries just wasn’t cutting it anymore. I decided to try something new and it definitely worked! Baby Food Makin’ Carrots Edition

Carrots weren’t planned. I had to buy carrots for a recipe and had a few left over and I thought “why not?”, it’s not that carrots aren’t healthy but they just weren’t “fun”. I wanted to do pears, sweet potatoes…but it happened, I made carrots and my little man loves them. So far I think his preference is 1. Zucchini 2. Carrots 3. Applesauce. Let’s Talk Chili

It’s the perfect time for chili! Monday night I made some yummy chili straight out of the Fixate cookbook; not only was it the perfect night for it but it was simple, delicious and we have tons leftover.   I love turkey chili! My go to recipe goes something like this: 2 cans tomato soup, 2 cans diced tomatoes, 2 cans of chili beans, 1 packet of chili seasoning, ground turkey and then top it with a little shredded cheddar and fresh onions. Halloween Hangover

Not the type of hangover I’m used to but it took me a couple days to recoup after Halloween week! I remember when I was trick or treating age, we got ready the night of Halloween and my Mom drove us around trick or treating. Easy. These days there’s Trunk or Treats just about everywhere, we have to take the kids to see Grandma and Grandpa, multiple Halloween events throughout the week and after all of that you still have to go trick or treating Halloween night. I’ve been so busy making yummy food and doing Mom stuff  that I haven’t posted any updates on Fixate!   So far everything has been awesome! I love love love that these recipes are enough for several meals because we had leftovers every time!   Here are some of the delicious meals I’ve made over the past couple of weeks: Vegetable Egg Cups What a time saver! Baby Food Makin’ Zucchini

Zucchini was the second food I wanted to introduce to Joaquin, not only because it’s a healthy veggie for baby but my parents always grow so much in their garden and we always have too much sitting around going to waste.     The first batch of zucchini I made was not the best! Two things I did wrong: 1. I peeled the zucchini – don’t do that, you lose so many nutrients and once it’s steamed it purees so well that you don’t have to worry about baby eating any peel 2. Day Numero Uno

Let me start off by saying…YUM! Everything I made today was a hit and hubby approved! Breakfast – Portobello Mushroom and Goat Cheese Omelette I replaced the goat cheese with Feta – filling and tasty. My omelette kinda fell apart when I folded it over, I made the mistake of using a larger pan which thinned it out too much but the result was the same…delish!   Lunch – Creamy Chicken Salad Wrap   Alex loved this, the flavors are not something we are used to, we rarely use dijon mustard or mix grapes into a salad, but everything came together perfectly!   Dinner – Turkey Sloppy Joes with Sweet Potato Chips   O M G. It’s Here! 21 Day Fixate

  The cookbook arrived and I couldn’t wait too pick out some meals and go grocery shopping! I’m keeping it simple for week 1 and choosing 3 recipes per meal as well as 1 soup, a couple snacks and a couple shakes. I’m also choosing recipes where food can be reused for other meals and recipes that don’t require a big investment on my part when it comes to grocery shopping.
